I worked very late yesterday. I managed a trip home to change clothes and went back to water plants. A friend of mine called... that conversation is the reason for the following:

MARIGOLD MUFFINS

Serves 4

INGREDIENTS

� cup Milk

1 � Tbsp Crushed dried marigold petals

2 cups Sifted flour

1 Tbsp Baking powder

� tsp Salt

3 Tbsp Vegetable oil

4 Tbsp Honey

1 Egg

INSTRUCTIONS

Heat milk to boiling point, add crushed petals.

In separate bowl, sift the flour, baking powder, and salt.

Add honey and egg, combine with dry ingredients.

Fill muffin cups 2/3 full and bake at 400�F for 20 minutes.

Edible Flower Corn Muffins with Calendula Butter

INGREDIENTS

Corn Muffins:

� cup Organic yellow cornmeal

1 cup Organic whole wheat pastry flour

� cup Organic cane sweetener

2 tsps Baking powder

� tsp Baking soda

� tsp Salt

1 cup Tofu

� cup Soy milk

1 Large egg, beaten

2 Tbsps Margarine, melted

2 cups Edible flower petals fresh

� cup Calendula butter

Calendula Butter:

8 Tbsps (1 stick) butter, at room temperature

� cup calendula petals.

INSTRUCTIONS

Preheat oven to 400� F. Grease a set of muffin tins (12) or a 8 inch square baking dish.

Combine cornmeal, pastry flour, sugar, baking powder, baking soda, and salt in a large bowl.

Mix well.

In another bowl, mix together the tofu, soymilk, egg, and margarine.

Mix with cornmeal mixture to form a wet batter.

Mix in flower petals and let the batter sit for ten minutes.

Spoon batter into muffin tins, or pour into baking dish.

Bake for 20 to 25 minutes until the muffins turn golden around the edges and a knife inserted in the middle comes out clean.

To make the butter:

Blend ingredients together in a small bowl.

Use right away or cover and refrigerate for up to 1 week.

Marigold Buns

1/2 c sugar

2 c flour

1 stick butter or marg

3 t. baking powder

2 eggs

2T apple juice

petals from 3-4 marigolds

oven 350�

cream butter & sugar. add eggs & beat 'til creamy. Add flour baking powder & apple juice. stir in petals.

bake 10 minutes on greased cookie sheet

makes 2 dozen

I add a little more juice to taste and add the petals by sight (what looks pretty)

Beltane Marigold Custard

2 cups milk

1 cup unsprayed marigold petals

1/4 tsp. salt

3 tbsp. sugar

1 to 2-inch piece vanilla bean

3 egg yolks, slightly beaten

1/8 tsp. allspice

1/8 tsp. nutmeg

1/2 tsp. rose water

whipped cream

Using a clean mortar and pestle reserved for cooking purposes, pound marigold petals. Or, crush with a spoon. Mix the salt, sugar and spices together. Scald milk with the marigolds and the vanilla bean. Remove the vanilla bean and add the slightly beaten yolks and dry ingredients. Cook on low heat. When the mixture coats a spoon, add rose water and cool.

Top with whipped cream, garnish with fresh marigold petals.

Apricot and Marigold Ice Cream

4 cups fresh ripe apricots

1 vanilla pod

3/4 Cup sugar

2/3 Cup water

2/3 Cup whipping crean

3 marigold heads

Halve the apricots and pit them. Put them with the vanilla pod in a heavy-based pan with 1 tbsp water. Cover and cook on very gentle heat. You could do this in an oven set to 300deg F instead. When cooked, discard vanilla pod. Puree the fruits, then sieve them. Dissolve the sugar in the water over medium heat in a heavy-based pan. Bring to the boil and cook 10 minutes to make a thick syrup. Pour this into the puree and leave to cool. Whip the cream and fold this into the mixture. Strip the marigold petals from the flower heads and add these to the mixture. process in an ice cream maker or freeze in the freezing compartment of the refrigerator.

Marigold Soup

From Herbs are Good Companions. This recipe is dated 1759.

Mince very fine 2 cups of spinach, 1 cup of chopped chives, 1 cup of parsley, 2 cups of calendula flowers petals, 1 cup young calendula leaves, 1/2 cup of raw rice, 1 cup of chopped celery, 2 onions chopped and 2 potatoes, season with 1 teaspoon salt, 1 tablespoon peppercorns. Cover with chicken broth, cook until celery and potatoes and rice test done. Before removing from the heat add 1/2 cup of dry white wine and 1/4 cup of butter. Garnish with a calendula blossom in each bowl.

Lotion: Mix a few drops of Calendula oil with your favorite skin lotion. Apply to cuts and scrapes. Great after sun lotion.

Marigold Facial Cleanser

4 tablespoons Almond oil

2 tablespoons Calendula flowers

3 drops of Rose water

Warm the oil in a bowl placed over a saucepan of hot water. Stir in the dried flowers and continue to heat gently for 30 minutes. Remove from heat, allow to cool, and stir in the Rose water.

Provides blood circulation to the skin for a heathy glow. Great for troubled and acne prone skin.

Calendula Ointment

1 lb. Coconut oil

2 good handfuls Calendula blossoms

Put oil and blossoms into a pot over very low heat for 30 minutes. Calendula should be crispy but not burnt. Filter into jars, and keep cool. Rub some on spider veins (twice a day), bruises, dry skin, cracked lips...

Make a double infusion for varicose veins (do this again with the same oil, adding the same amount of herbs). Spider veins should start showing visible improvement in about three weeks or so, and take about six months to clear up.

Marigold Bath

This will act as an astringent and stimulate. Marigold have dehydrating properties and can help reduce excess body fluids.

1 cup dried marigold petals

1 teaspoon baby oil

Add to warm (not hot) running water.
